North Carolina BBQ Sauce for a Crowd

I'm at it again -- feeding a crowd, and barbecue is always a crowd pleaser.  This time I opted to purchase the meat from Woodlands BBQ in Blowing Rock -- I bought their smoked pork, although my family really loves their smoked chicken the best.  I made the Creamy Coleslaw that that prompted my kids to declare that I make the best slaw in the entire world, and my North Carolina BBQ sauce for a crowd.  Big hit.  For all of you who asked for the recipe, here it is...

North Carolina BBQ Sauce for a Crowd

Ingredients:
  • 8 cups apple cider vinegar
  • 2 cups thinly sliced white onion
  • 1 cup ketchup
  • 3 cups water
  • 1/2 cup dark brown sugar
  • 1/3 cup Kosher salt
  • 1/4 cup crushed red pepper flakes
  • 1 tablespoon ground black pepper
Directions:
  1. Combine all the ingredients in a large pot. Bring to a boil over medium-high heat.
  2. Simmer for about 30 minutes, stirring occasionally.
  3. Remove from heat and let cool to room temperature.
  4. Spoon onion and seasonings into 6 squirt bottles. Then use a funnel to pour in the liquids.
  5. Store in the refrigerator.
Yield: 12 cups
Prep time: 5 minutes
Cook time: 30 minutes
