Smoked Gouda Pimento Cheese

Smoked Gouda is the current family favorite cheese.  Thankfully, it has ousted the more pricey Manchego from the top spot!  We love smoked Gouda on pizza, in mac and cheese and cheese grits, and for pre-dinner noshing.  Last weekend, I whipped up a batch of this Smoked Gouda Pimento Cheese to take to the lake for sandwiches.  Pimento cheese in all forms also makes a great appetizer served with celery sticks and wheat thins.  My preference would be to make the spread in thoroughly Southern fashion using full-strength Dukes mayonnaise, but I usually try to cut some fat and calories by substituting  Kraft Reduced Fat Olive Oil Mayo instead. Spicy minced pepper adds the perfect kick and just a bit of heat.

Smoked Gouda Pimento Cheese

  • 1/2 pound of smoked Gouda cheese, grated
  • 1/2 cup of mayonnaise
  • 1/2 cup chopped green onion
  • 1/2 ounce jar of pimentos, drained and chopped
  • 1 tablespoon minced Serrano or Jalapeno pepper
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon kosher salt
  1. Combine all the ingredients in a large bowl, stirring to thoroughly to combine. 
  2. Refrigerate at least thirty minutes before serving on rye bread, celery sticks or wheat thins.
Yield: 1 1/2 cups
Total time: 45 minutes (includes 30 minutes inactive time)
