Meal Plan with Recipes (10/23)

This week's meal plan starts with a Southern-style Sunday supper of fried trout, cheese grits and apple slaw.  Dinner is always more special when it includes dessert, so I try to do that once a week or so.  The Fudge Pie is super easy and won't take much of your Sunday afternoon.  Monday's Chicken Tetrazzini is a great do-ahead.  The recipe is easily doubled -- make two and take one to a friend who is under the weather or overwhelmed. Or, stick it in the freezer for the next time you are under the weather or overwhelmed!  The casserole can go straight from the freezer to the oven.  Tuesday's dinner of easy comfort food may be my favorite of the week -- spicy soup and homey cornbread muffins.  To save time and make less mess, you can buy or bake the tortilla strips instead.   Leftover soup for my brown bag lunch is a bonus! Unless there's a lot of snow on the deck, I always want to grill at least once a week.  The only time-consuming part of Wednesday's dinner of grilled bison burgers is caramelizing the onions.  That's another good do-ahead.  Double the batch and freeze half for next time you make the burgers.  The red wine-caramelized onions are also a handy thing to have in the freezer if you are throwing a pot roast into the slow-cooker and don't have much time to prep.  I love serving a dinner salad once a week, but haven't been very good about it lately.  This Cobb salad is very hearty and a family favorite.  If the weather is cool,  you may want to serve a mug of soup alongside.  Here's to a week of fabulous family dinners!
