This Week's Meal Plan

I'll be gone for more than half this week, so really this is a meal plan for a couple of nights along with my recommendations for DH:

Monday – Skirt Steak Tacos, Salsa Fresca, Black Bean, Corn & Avocado Salad

Last week's tacos got bumped from the menu for the Merguez sausage and I am still craving that kind of spicy. I picked up the season's first tomatoes and corn at Josh's Produce yesterday to use in the salsa fresca and black bean salad.

Tuesday – Salmon Cakes with Lemon Yogurt Sauce, Roasted New Potatoes, Zucchini Carpaccio Salad

My original idea was to grill the salmon and serve it with a zucchini gratin. Then I looked at the weather forecast for Tuesday... Pan-frying salmon cakes on the stove will likely be a better plan. The new potatoes and zucchini are also from my trip to Josh's. I'm planning to serve both the salmon cakes and the zucchini over a bed of spring greens, with the roasted potatoes on the side.

Wednesday – Take-out Smoked Chicken and Pulled Pork Sandwiches, Baked Beans, Chips

I am leaving Wednesday for BlogHer Food in Atlanta! My recommendation is that DH pick up a pound each of smoked chicken and pulled pork from Woodlands Barbecue and serve that on buns with some baked beans on the side. Does not get much easier than that, and the kids will love the leftovers in their lunches.

Thursday – Asian Grilled Wings, Vegetable Fried Rice, Cucumber Salad

Thursday looks to be one of the nicer days this week so the guys should be able to grill. There are chicken wings in the freezer and a variety of vegetables in the produce drawer that can go into the fried rice. W can grill the wings while DH makes the rice and salad.

Friday – Take-out Pizza, Greek Salad

The guys will head down to the lake for the weekend. Sebastiano's Pizza tends to be our default dinner for Friday night at the lake.

Saturday – Dinner Out

W is racing his Opti in the Hospice Regatta on Saturday and Sunday. B and DH are on race committee. Saturday night's dinner is catered by Outback Steak House.

Sunday - Cheese Burgers, Grilled Eggplant & Tomato Salad

I am planning to stop at the lake on my way back from Atlanta. Hopefully we'll get home in time to grill some burgers and sit down together for dinner. The kids' end-of-grade testing starts the next day so they will need to get fed and get to bed.

I want to be more like you! I love to cook but it's been a definite struggle to think of things to make even though I have more cookbooks than the average person.

Hey Stacey, I want to be more like you so this summer I am going to be making lots of pickles! Seriously,I was very intimidated about trying something like but now I've decided I'm over it. And next winter, maybe I'll try to knit something besides a rectangle!
