Meal Plan for the Third Week of May

My kids have their end-of-grade tests Monday through Wednesday of this week so I want to make sure we eat early the first part of the week. After the tests are over, the teachers will be giving the kids a break for the rest of the week so I am taking the boys out of school and going to visit my parents in Mississippi.

Monday - Zucchini and Caramelized Vidalia Onion Lasagna, Green Salad

I am going to give Meatless Monday another try. My sister V makes a zucchini lasagna that I love. My plan is to use whole wheat noodles to cut the carbs and make a couple of changes to lower the fat as well. The kids are not wild about zucchini, but they love caramelized onions so hopefully they'll be happy.

Tuesday - Grilled Chicken with Olive Salad, Pasta, Broiled Tomatoes

Boneless skinless chicken breasts are a BOGO at Harris Teeter this week. My idea is to do a muffaletta-inspired version layering on mortadella and mozzarella or provolone cheese and topping it with some kind of olive salad. I (heart) mortadella.

Wednesday - On the Road

Who knows what lovely dining option awaits us on the Interstate? Once I figure out what time we'll be leaving and where we'll be around dinner time, I'll be consulting Marie, Let's Eat! to see what might work.

Thursday - Grilled Pork Tenderloin with Pineapple Salsa, Black Beans, Rice, Guacamole

Pork tenderloin is a staple at my parents' house and is always a big hit with the boys. I've written a new recipe for grilled pineapple salsa that will go well with the pork.

Friday - Glazed Corned Beef, Braised Cabbage, New Potatoes, Spring Onions

This was Mom's suggestion. Since DH torched our St. Paddy's day corned beef while glazing it, I am looking forward to this one!

Saturday - Fried Chicken, Mashed Potatoes, Butter Beans, Sliced Tomatoes

This is the meal that Mom is more-or-less required to make when one of her children comes home. Southern cooking at its finest! Hopefully there will be a chocolate pie for dessert...

Sunday - Breakfast for Dinner

DH is staying home this trip. He knows that a nice pile of corned beef hash with a fried egg on top takes the edge off after that 12 hour drive!
