Broccoli -Apple Slaw with Buttered Pecans

This is a great little slaw that I make year-round since the ingredients -- broccoli slaw, lemons and apples -- are always readily available and inexpensive. It is the perfect way to add a light, fresh component to an otherwise heavy meal. You'll love it with barbecue, burgers, cheese grits, and fried fish. I've posted variations on this slaw recipe, but never my go-to favorite version.

This recipe is my adaptation of a Bon Appetit recipe which uses sliced cabbage:

Broccoli-Apple Slaw with Buttered Pecans

  • 12 ounce bag of broccoli slaw
  • 1/2 Granny Smith apple, cut into 1/4 inch dice
  • 2-3 tablespoon fresh lemon juice
  • 1/2 cup pecans,chopped
  • 2 tablespoon unsalted butter
  • 1 1/2 tablespoons dark brown sugar
  • 2 tablespoon fresh chives, minced
  • 1/8 teaspoon kosher salt
  • Pinch of cayenne
  1. In a salad bowl, toss together the apple and broccoli slaw.
  2. In a small skillet, melt the butter then toast the pecans over moderate heat, stirring frequently, until fragrant.Turn down the heat. Sprinkle the sugar, salt and cayenne over the pecans and cook, stirring constantly (don't walk away!) until the pecans are coated. Remove the skillet from the heat and cool the pecans slightly.
  3. Add the contents of the skillet to the broccoli slaw and apple mixture. Add two tablespoons of the lemon juice and toss to combine. Taste and add lemon juice to taste.
Yield: 4 servings
Prep time: 10 minutes
It was a beautiful evening to dine on the deck tonight. I served the slaw with grilled turkey sliders and baked beans -- an easy, healthy and relatively inexpensive dinner. The family was well-fed and happy. What more could I want?
