Smoked Salmon Spread

I needed a quick appetizer to take to a party a couple of days ago. My fridge's deli bin yielded packages of cream cheese and smoked salmon. There was a little fresh dill in the crisper. Shallots, lemon and horseradish were also on hand so I blended them all together and thined the mixture with a little Greek yogurt to make this tasty Smoked Salmon Spread. The spread needed a little more dill flavor so I added a bit of dried along with Kosher salt and black pepper. This is a great do-ahead -- I think it tasted even better the next day!

Smoked Salmon Spread
Ingredients:

  • 8 ounce cream cheese, at room temperature
  • 1/2 cup plain Greek yogurt (low-fat is fine)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon shallot, minced
  • 1 tablespoon fresh dill, minced
  • 2 teaspoons prepared horseradish
  • 1 teaspoon dried dill
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 ounces smoked salmon, minced
  • capers and fresh dill for garnish
Directions:
  1. Put the cream cheese in a medium bowl and cream with a hand-mixer.
  2. Add the yogurt, lemon juice, shallot, fresh and dried dill, horseradish, salt and pepper. Combine using the hand-mixer on low.
  3. Add the salmon and stir until it is evenly combined.
Serve with crudite such as cucumber slices and celery, and crackers. Triscuits, Wheat Thins, Bagel Chips and Carr's Wafers are all good choices.

Yield: 2 small crocks
Prep time: 15 minutes

The recipe made more than would fit in the little crock I wanted to use to serve, so I saved the rest for later. I've eaten it on a bagel for breakfast the last two days. Yum! I'll definitely keep this recipe in mind for when I want to plan a quick and easy breakfast for camping or hanging out at the lake.
