Meal plan for Third Week of April

We had a busy weekend so while I've had a few thoughts about this week's dinner floating around, it took me until later this afternoon to pull it all together.

Monday - Orange-Horseradish Glazed Pork Chops, Smoked Gouda Mac & Cheese,Spinach and Blood Orange Salad

A foul mood this afternoon was made better by the thought of some smoked gouda mac & cheese. It's grilling weather for the moment so DH is grilling some boneless pork loin chops. I made a Jezelbel-esque glaze for them. I found some lovely blood oranges on sale so those are going into the spinach salad and the vinaigrette.

Tuesday -Grilled Shrimp, Andouille Sausage and Grits, Green Salad

Shell-fish allergic child is gone for the week on his eighth grade trip so we are going to eat most of the remaining shrimp and crawfish from the freezer. I am not exactly sure what I am doing with the shrimp, sausage and grits, but I'll have fun figuring something out tomorrow.

Wednesday - Crawfish Pie, Green Salad with Creole Buttermilk Vinaigrette

Wednesday night is the one night this week so far when grilling does not look like feasible. Katherine over at Smoky Mountain Cafe made crawfish pie a week ago and I've been thinking about it ever since. This has the potential to become B's favorite new food. Singing optional.

Thursday - Black Beans and Rice with Chorizo

Leftover black beans from Saturday night went into the freezer today to be used in the future for dips, enchiladas, etc. An easy dinner on Thursday night is always a good plan.

Friday - Dinner Out

Saturday - Barbecued Ribs and Chicken, Crawfish Cornbread, Slaw

We are tentatively planning to have some friends over to barbecue on Saturday afternoon. I've been wanting to make crawfish cornbread for months, but I need some friends to help me eat it!

Sunday - Easter Dinner TBD

I cooked Easter dinner last year for the first time. It may not happen every year, but for now lamb and coconut pie are going to be two new holiday traditions.

I love shrimp and grits!...Wish I was a better cook...

If you can get good grits and fresh shrimp, you can probably make great shrimp and grits! The only tricks are to stir like crazy when you add the grits to the broth, and whisk like crazy when you add the broth to the roux:

I love "What's Cooking on the Mommy Porch" ~ so much catchier and unique than "Another Marvelous Meal." Why the change?

A little background: The blog was started with the idea that it would be about various interests of mine -- things I might do on the Mommy Porch. When the focus narrowed to almost exclusively food, I modified it to "What's Cooking on the Mommy Porch? so that it would be identifiable as a food blog, but I have always felt like the name required explanation. And I am not sure that that is a good thing...

I am getting ready to buy a domain name so I figured if I am ever going to change it, the time is now. I'll take your comments under advisement! Thanks, Lynn
