Long drive back from Charleston tonight and I have a raging sinus infection,but an obsession is just that -- I can't go to bed without making my meal plan or Monday morning will be shot.
Monday –Spring Chicken Stew, Mixed Green Salad
I'm thawing two bone-in, skin-on chicken breasts from the freezer and plan to roast them to make a chicken stew. My real motivation for this menu choice will be revealed in a blog post later this week! Need to buy: spring vegetables (asparagus? peas? mushrooms?) and salad greens.
Tuesday – Grilled Tuna Tacos, Black Beans, Sliced Mango
Wednesday –Turkey Andouille Burgers, Green Salad with Creole Buttermilk Dressing
I have an abundance of Andouille sausage in my freezer -- both pork and turkey varieties, along with some pork and crawfish sausage that needs to get eaten. Burgers are easy, but I'm going to have to think about what kind of cheese will work here... Need to buy: ground turkey, buns, salad greens.
Thursday – Fancy Dinner Out at The Gamekeeper to Celebrate Two Great Report Cards
We are really pleased with the excellent report cards that just came home. The boys have never been to The Gamekeeper so they will be excited. Plus, I have a Groupon Coupon and Thursday night is local's night in April!
Friday - Chicken Souvlaki, Tzaziki, Pita
This is an easy do-ahead dinner to take to the lake -- marinate the chicken and make the Tzaziki at home, then skewer and grill when we are ready to eat. Need to buy: chicken breasts (on sale at Lowe's), cucumber, pita.
Saturday – Junior Fleet Dinner
The Junior Fleet at our yacht club is hosting a dinner Saturday night. Guess who is helping with the cooking?
Sunday - Smoked Chicken Sandwiches with Barbecue Sauce, Baked Bean, Broccoli Slaw
This is a carry-over from last week. It will be a quick dinner to put together after we get back from the lake. The chicken is smoked and the barbecue sauce is made. Doctor up some Bush's Baked Beans, throw together some slaw and dinner is served. Need to buy: broccoli slaw.
