We've had house guests so this week's meal plan is being posted a little late. The house guests are also the reason that Monday's dinner was somewhat more lavish than usual. Tuesday's dinner celebrates Creole cuisine in honor of Mardi Gras. By Wednesday, DH and I will be wanting to dine a little lighter. A dinner salad fits the bill. This week is my University's Spring Break so I'll be flying south on Thursday leaving Dad in charge. Who knows what he will actually make for dinner, but at least he has a suggestion! I didn't complete this month's Daring Cook's Challenge last week as planned because I will have much choicer ingredients to work with in Florida this week. My hostess does not yet know I'll be making dinner Friday night! Saturday we'll all be dining out. I am flying back in on Sunday mid-day. Dinner will be just me and B. He has a new-found love in Italian sausage so I am going to make a Chicago-style pizza for the two of us.
