DH gave me a Panini press for my birthday at the end of October and frankly, I am not sure which of us loves it more. He has used it to cook bacon and sausage for breakfast, Cuban sandwiches for dinner, and sliders and Paninis for the boys’ lunches (I swear, I am amazed my children do not get beaten up for their lunches!).
I have always loved pressed-flat, crunchy sandwiches. When I was in high school, there was a bar/ restaurant (mostly bar) in Pascagoula called Castaways that served a garlicky pressed roast beef po-boy with gravy that started this love affair – I may devote a weekend soon to recreating it. I opted for healthier fare this week. For my Meatless Monday lunch, I made a Panini of goat cheese, spinach, caramelized onions, thin-sliced apple and balsamic fig jam. It didn’t photograph well, but was really yummy. DH and W are having dinner on the road home from Charleston tonight and I didn’t feel like doing real cooking. B was very happy with leftover roast chicken and potatoes so I made myelf a Panini with smoked turkey, applewood smoked bacon, spinach, apple, honey mustard and Colby-jack cheese. It was similar to one I had at the Storie Street Grille in Blowing Rock last weekend and while their's was good, I have to say: mine was better.
