Chunky Chicken Noodle Soup
B and I are hanging out at home this weekend. DH has taken W to a two-day sailing practice in Charleston. B and I have hunkered down for a cold weekend, possibly our first snow. The tree is decorated and the stockings are hung by the chimney with care, so I am hoping that B and I can work on a couple of other decorating projects. We have a funky wreath that we decorated with elves we made using extra photos, pipe cleaners and wrapping paper that we (mostly me) made years ago. The frame fell apart when we moved and we haven't had the time to put it back together until now. I bought some icicles from Chinaberry to make and decorate a couple of years ago so that's another project. We have some cooking and baking to do too. We'll see what actually gets done. Right now, we're hanging out on the couch watching Fame. B is a big Glee fan so I suspected he would like it. I was right. The movie was made in 1980 -- 29 years ago. It is amazingly undated.
I had originally planned on making a pot pie for dinner -- a favorite of B's, but not something that works on DH's low carb diet. But since B's stomach was upset today, I suggested making chicken noodle soup. B agreed, but only if it was chunky chicken noodle soup. I sweated some green onions, shallot, parsley,carrot and celery in a little butter, then simmered that with some good organic chicken broth. I added some chunky pieces of a rotisserie chicken and some egg fettuccine noodles. B approved.
